Sautéed wild greens with eggs

Ingredients

  • 4 eggs
  • 500gr wild mountain greens
  • cauliflowers
  • myrrh
  • tomato flakes
  • pumpkin flowers
  • spinach
  • leeks
  • chard
  • zucchini green
  • green and red peppers
  • onions (2 dry & 4 fresh)
  • ¼ dill, ¼ parsley, a few mint leaves and ½ bunch fennel all finely chopped
  • 1-2 chopped tomatoes
  • Salt and pepper
  • 1-2 cups of olive oil
  • 1 hot pepper

Execution

Wash the vegetables well and chop them finely.
In a saucepan, heat the olive oil, fry the onions and then add the vegetables, tomato, salt, pepper, a cup of water and bring to a simmer. After the greens are boiling and almost done, break the eggs into eyes over the greens.

Cover the pot for about 4 minutes until the eggs are cooked.
*If it is summer, add 2-3 koromila fruits to the meal.
