Oregano meatballs

Ingredients

Pelion is famous for its fragrant wild oregano, which grows almost everywhere. The old Pelionites used it in the tender phase of its growth to make the famous “riganokefetedes”!

  • A bunch of fresh oregano
  • four medium boiled potatoes
  • one egg
  • feta cheese
  • salt
  • pepper
  • flour
  • oil for frying

Execution

Execution Boil the potatoes, peel them and mash them with a fork. Peel the oregano leaves and finely chop them. Mix in a bowl with the potatoes and cheese. Season with salt and pepper and add the egg. Stir until the mixture is smooth. Place in the refrigerator to firm up. When it’s time to fry, take mixture with a spoon, shape it, flour it and fry it in hot olive oil. In the same way you can make potato patties with various ingredients, substituting fennel, mint, coriander, etc. for oregano.
